There is a reason why Margaret River Chardonnay is revered not only in Australia but around the globe. A perfect regional combination of a maritime climate, ancient soils and fresh tempering ocean breezes combine to give an almost perfect set of conditions for growing great Chardonnay.
Our 2021 Flying Fish Cove Chardonnay shows the benefit of its Margaret River origins.
It features aromas of pear, grapefruit and citrus blossom, while a bright and fresh palate displays layers of stone fruit and citrus flavours.
Time on lees has further enriched the palate showing a long, creamy finish.
TASTING NOTES
This year we have pursued a richer style incorporating malolactic fermentation to ameliorate the naturally high acidity from the 2021 vintage.
Colour: Pale straw
Bouquet: Complex aromas of citrus, toasted oatmeal, and stonefruit, are enhanced by a soft toasted vanilla and warm spicy oak nuance seen from barrel fermentation and maturation in seasoned French oak barriques.
Palate: Ageing on lees for 6 months has further enhanced a creamy, long and soft finish.
Flavours of rich toasted butter.
Cellaring: This wine is drinking beautifully now and over the next 3-5 years.

WINEMAKERS NOTES
Sourced from the Warner Glen and Wildberry Vineyards in the Karridale and Wilyabrup sub regions of Margaret River, our 2021 Flying Fish Cove Chardonnay is a premium style that delivers maximum fruit expression.
Gin-Gin Chardonnay is harvested, before being transported to the winery with immediate processing to ensure maximum retention of aroma and flavour components in this wine.
100% of this wine was fermented and matured in 2-3 year old oak. A slow and tempered yeast fermentation follows for approx. 10-14 days.
For two months following fermentation, the wine is stirred on-lees to breed further texture and complexity into the wine.
After 6 months of careful barrel maturation the Chardonnay was blended and a light fining and filtration was performed prior to bottling.
