Flying Fish Cove's Sparkling Pinot Noir Chardonnay is the ultimate apéritif bubbly, creamy and delicate it will light up all your parties.

Made in the traditional method, and from the favourite French varieties of chardonnay and pinot noir. 

Colour: Pale straw

Bouquet: Fine and delicate aromatics of lifted strawberry, citrus blossom and toasted brioche

Palate: The palate is fine and long showing rich almond meal and fresh citrus flavours. The small, abundant bead provides a generous and creamy palate.

Variety: Pinot Noir 80% - Chardonnay 20%

Region: Margaret River, Western Australia 100%

Triple cream (Brie-style) cheese, shrimp and shellfish, smoked salmon, caviar, fried calamari, and oysters.

Our sparkling is made using méthode traditionelle, or traditional method,

Fermented in bottle then aged on lees, which adds notes of brioche and textural richness. Riddled, disgorged, then dosaged before the wine receives its finishing cork.
