FOOD PAIRING

A classic Margaret River blend that's fresh, zesty, with bright acidity - making it a great food-friendly wine.

Pair it with laid-back summer dishes. Pan fried whiting fillets. Freshly peeled prawns and zingy lemon. Pan seared lightly Panko crusted Fremantle sardines with rocket tomato and buffalo mozzarella salad drizzled with salsa verde. Crisp green salads.

WINEMAKERS NOTES

Winemaking

Our philosophy when making aromatic dry whites is to keep it simple. Clean and fresh fruit is delivered to the winery and crushed and pressed as soon as possible. Following pressing we float the juice which seperates the grape solid material and leaves a clarified juice. This clarified juice is then racked and yeast added. A cool and temperate ferment ensures maximum retention of fresh fruit aromatics and flavours. Soon after ferment the wine is filtered and bottled.

Viticulture

Our SBS fruit is sourced from both Karridale and Wilyabrup. Karridale Sauvignon Blanc grown on a VSP trellis which enables a good mix of both exposure and shade within the fruit zone. This mix of sunlight and shade allows for cool ripening condition and maximum fruit expression. Wilyabrup Semillon gives our wine the fruit intensity and punch that delivers a wonderful texture and weight.
