Flying Fish Cove's Sparkling Pinot Noir Chardonnay is the ultimate apéritif bubbly, creamy and delicate it will light up all your parties.

Made in the traditional method, and from the favourite French varieties of chardonnay and pinot noir. Same classic taste as previous vintages, now with a rose gold hue.

TASTING NOTES

Colour: Straw

Bouquet: Displays fine and delicate aromatics of lifted strawberry, citrus blossom and toasted brioche.

Palate: The palate is fine and long showing rich almond meal and fresh citrus flavours.

The small abundant bead provides a rich and creamy palate.

Variety:
Mt Barker Pinot Noir 75%
Margaret River Chardonnay 25%

WINEMAKERS NOTES

The Pinot Noir and Chardonnay grapes were whole bunch pressed, in keeping with traditional style.

Fermented in the bottle and aged on lees for a minimum of 9 months making this a traditional Methode Champenoise.

FOOD PAIRING

Triple cream (Brie-style) cheese, shrimp and shellfish, smoked salmon, caviar, fried calamari, and oysters.
