Pinot Noir joins the Flying Fish Cove lineup. From Mt Barker in Western Australia’s Great Southern.

Bright ruby red with lifted aromas of strawberry, musk, rose petal, and damp earth combine with warm spice to complete a complex bouquet. A light framed palate displays medium bodied flavours of fresh red berry, pomegranate, and light cherry notes. Delicate spice and soft tea like tannins complete this elegant and refined expression of Pinot Noir.

WINEMAKERS NOTES

Winemaking

Our first Pinot Noir under the Flying Fish Cove label was
made using 100% whole bunch fermentation. The intracellular fermentation technique of carbonic maceration was employed to retain as much primary fruit aroma and flavour as possible. Following a 21 day ferment, the whole clusters were loaded to the press and gently pressed to express the fermenting wine. A short period of secondary fermentation was followed by about three months post ferment maturation prior to bottling.

Viticulture

The 115 Dijon clone of Pinot Noir was used for this wine
and this was grown on the Landsdale vineyard in Mt Barker subregion of the Great Southern in Western Australia. The fruit was grown on a VSP style trellis system allowing for a good mix of dappled light penetration and moderate ripening.
