Say ciao to Sangiovese. Our first for The Italian Job, from Yallingup in Western Australia’s Margaret River Region.

Bright, dark rugby red in appearance. Flavours of plum, cherry, raspberry and spice are complemented by savoury, earthy and flinty graphite notes.

Medium bodied with a vibrant mix of fine tannins supporting the fresh cherry and spice flavours, showcasing a wine of great length and persistence.

WINEMAKERS NOTES

Winemaking

Ripe Sangiovese fruit is delivered to the winery and lightly crushed to fermenter. A slow and tempered fermentation
follows with gentle pump overs to allow optimum extraction of colour, flavour and the hallmark terracotta like Sangiovese tannin profile.

After 11 days in the fermenter the fruit was gently pressed and allow to settle prior to sending to seasoned French Oak for 15 months. Following barrel maturation the wine was clarified prior to bottling.

Viticulture

The fruit for this wine was grown on the Hopping Stone vineyard in Yallingup. The vines are managed on a vertical shoot positioned trellis system to allow for moderate yield and exposure of the fruit. The hopping stone vineyard is normally a late ripening site, allowing a slow and tempered ripening window which leads to wonderful flavour and tannin maturity.
